    About this recipe: A deliciously hearty soup, which is perfect for the winter months. Potatoes, carrots, celery, onions and ham are simmered together, then blended with a cheese soup base. Enjoy with fresh crusty bread for lunch or dinner.

    Makes: 8 

    • 500ml water
    • 310g peeled potatoes, diced
    • 65g carrots, diced
    • 60g celery, chopped
    • 4 tablespoons chopped onions
    • 1 1/2 teaspoons salt
    • 1/4 teaspoon ground black pepper
    • 115g cooked ham, cubed
    • 50g butter
    • 4 tablespoons plain flour
    • 500ml milk
    • 225g Cheddar cheese, grated

    1. In a large saucepan, mix the water, potatoes, carrots, celery, onions, salt and pepper. Bring to the boil. Reduce heat and simmer 30 minutes or until vegetables are tender.
    2. Mix the ham into the vegetable mixture.
    3. In a medium saucepan, melt the butter. Stir in the flour until smooth. Slowly pour in the milk. Bring to the boil. Cook and stir 2 minutes or until thickened. Stir in the Cheddar cheese until melted.
    4. Mix the melted cheese mixture with the vegetable mixture and serve.
