    About this recipe: A super-easy and delicious recipe for broccoli soup. Broccoli is simmered with tagliatelle, chicken stock, milk and processed cheese. Perfect for those cold winter months. Enjoy with crusty bread.

    Makes: 6 - 8 servings

    • 100g onion, chopped
    • 15g margarine
    • 1.2 litres chicken stock
    • 225g dry tagliatelle
    • 225g frozen broccoli florets
    • 1 clove garlic, finely chopped
    • 1.5 litres milk
    • 350g processed cheese, such as Kraft singles, unwrapped and chopped

    1. In a large saucepan, saute onion and garlic in margarine over medium heat till tender.
    2. Add stock and bring to the boil. Reduce heat and add tagliatelle. Cook for 3 to 4 minutes. Stir in broccoli. Cover and cook for 5 minutes.
    3. Stir in milk and cheese. Heat slowly, stirring, until cheese melts. DO NOT BOIL. Serve immediately.
