Perfect cream of broccoli soup

    A wholesome vegetable soup. Onion, carrot, broccoli, celery, chicken stock and milk are simmered together and then pureed. Serve with thick wodges of garlic bread.

    Serves: 6 

    • 1 onion, chopped
    • 1 carrot, diced
    • 1 clove garlic, chopped
    • 750ml chicken stock
    • 1 stick celery, diced
    • 275g broccoli, chopped
    • 500ml milk
    • 1 teaspoon salt
    • 1 pinch ground black pepper

    Prep:15min  ›  Cook:20min  ›  Ready in:35min 

    1. In a large stock pot, combine onion, chicken stock, carrots, celery and garlic. Bring to the boil.
    2. Add broccoli, cover and cook for 5 to 10 minutes or until tender.
    3. Transfer soup to a liquidiser or food processor and puree. Return to stock pot, add milk, salt and pepper and heat through over medium heat.

    very nice but lacked a little spice. Try adding a teaspoon of curry powder .makes a vast diffirence just gorgeous.  -  09 Aug 2016


    very nice, and can be quite light depending how much stock you add. I fried the onions and garlic a little before adding the stock too. Very nice!  -  21 Apr 2016


    Thanks for this healthy recipe! Definitely one of the healthiest "cream of broccoli soup" recipe that I could find on internet! Very delicious and easy to make! I make it now at least once a week. Sometimes, I use almond milk instead of milk, which makes it even healthier!  -  05 Oct 2015
