3 cloves crushed garlic
3 tablespoons ground ginger
1 tablespoon olive oil
4 limes, juiced

Pound the chicken to 1cm (1/2 in) thickness. In a large re-sealable plastic bag, combine the garlic, ginger, oil and lime juice. Seal bag and shake until blended. Open bag and add chicken. Seal bag and marinate in refrigerator for 20 minutes.
Remove chicken from bag and barbecue or grill, basting with marinade, until cooked through and juices run clear. Dispose of any remaining marinade.

For simplicity alone this recipe gets four stars. I liked the fact that I already had all the ingredients in my kitchen, too. I will use this recipe again when I'm in a hurry. This is a nice lowfat meal. I served it with fresh green beans and noodles. Thanks Susan! - 18 Jul 2008
