1 tablespoon curry powder or to taste

Heat oil in a large frying pan over medium heat. Add onion and garlic and cook and stir for 2 minutes; add quinoa and cook and stir until lightly toasted, about 5 minutes.
Pour stock into the pan and bring to the boil. Reduce heat and add curry and chilli powders; cover and simmer until tender, about 25 minutes. Season to taste with salt and pepper.
