    About this recipe: A delicious and hearty soup that's packed full of protein. Beef mince is simmered with kidney beans, sweetcorn, peppers and tomatoes. Serve with corn bread or fresh crusty bread.

    Serves: 40 

    • 900g minced beef
    • 6 sticks celery, chopped
    • 2 onion, chopped
    • 1 green pepper, chopped
    • 1 small head cabbage, chopped
    • 3 (410g) tins kidney beans
    • 1.3 litres V8 vegetable juice
    • 1.3 litres tomato juice
    • 2 1/2 (340g) tins sweetcorn, drained
    • 4 (400g) tins chopped tomatoes
    • 3 tablespoons chilli powder
    • 1/4 tablespoon garlic granules
    • salt and pepper to taste

    1. In a large soup pot, saute minced beef until brown. Drain excess fat.
    2. Add celery, onions, green peppers, cabbage, kidney beans, vegetable juice, tomato juice, sweetcorn, chopped tomatoes and chilli powder.
    3. Bring to the boil, then reduce heat to low. Cover pot and let simmer about one hour or until celery is tender. Add garlic granules and salt and pepper to taste.
