    About this recipe: A super-easy gingerbread recipe, made by using ready-made scone mix. It's low in fat and quick to whip up for those unexpected guests. Serve with good quality vanilla ice cream.

    Makes: 8 

    • 365g scone baking mix
    • 75g caster sugar
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/8 teaspoon ground allspice or ground cloves
    • 1 teaspoon ground ginger
    • 175g black treacle
    • 120g apple sauce
    • 1 egg, beaten

    1. Preheat the oven to 200 C / Gas 6. Grease a baking tray.
    2. In a medium bowl, stir together the scone baking mix, caster sugar and spices. Mix in the black treacle, apple sauce and egg until the mixture forms a ball.
    3. Turn out onto a lightly floured surface and knead for 10 turns. Place onto the prepared baking tray and pat into a 26cm circle.
    4. Bake for 15 minutes in the preheated oven. Cut into wedges while still warm and serve with vanilla ice cream.
