Creamy tortilla soup

    This wonderful soup takes 10 minutes to make. Chicken soup is heated with chopped tomatoes and passata, then poured over tortilla chips and grated Cheddar. Perfect for the cold winter months.

    Serves: 2 

    • 2 (295g) tins cream of chicken condensed soup
    • 280g tinned chopped tomatoes with chilli
    • 225g passata
    • 225g tortilla chips
    • 115g grated Cheddar cheese

    1. In a medium saucepan over medium high heat, combine the soup, tomatoes and passata. Bring just to the boil and remove from heat.
    2. Place some tortilla chips in the bottom of an individual bowl and sprinkle cheese over the chips. Pour soup over the chips and cheese.
