About this recipe: Tomatoes, garlic, Scotch bonnet chillies, red onion, cabbage, coriander and lime juice are mixed together to create this fantastic salsa. It's full of flavour and texture. Serve as a side with whatever you fancy.

Serves: 16 

  • 7 plum tomatoes, seeded and diced
  • 6 cloves garlic, finely chopped
  • 6 Scotch bonnet chillies or to taste, seeded, ribs removed and finely chopped
  • 1 small red onion, finely chopped
  • 100g chopped cabbage
  • 1 bunch fresh coriander, chopped
  • 75ml fresh lime juice
  • salt to taste

  1. Combine the tomatoes, garlic, chillies, red onion, cabbage, coriander and lime juice in a large bowl. Season to taste with salt. Refrigerate for several hours before serving.


For a tangier salsa, add the zest of a lime and some additional lime juice.
