About this recipe: A delicious onion soup, that's super-easy to make. Onions are caramelised, then simmered with beef stock and other seasonings, before being garnished with Gruyere cheese topped crouton. It makes the perfect starter or appetiser. Serve at your next dinner party.


Serves: 6 

  • 450g onions, sliced
  • 3 tablespoons vegetable oil
  • 800ml beef stock
  • 1 teaspoon Worcestershire sauce
  • 1 pinch ground black pepper
  • 6 slices French bread, toasted
  • 70g grated Gruyere cheese

  1. Cook and stir onions in vegetable oil in a covered large saucepan over medium heat for 20 minutes. Stir in the beef stock, Worcestershire sauce and black pepper; bring to the boil. Remove from heat.
  2. Place bread on a baking tray; sprinkle bread with cheese. Grill for about 1 minute or until cheese is melted and golden.
  3. Ladle soup into bowls and top with bread.
