About this recipe: A yummy take on the traditional French onion soup. Caramelised onions are simmered with beef stock, then poured over toasted bread, topped with cheese and baked.


Serves: 6 

  • 2 onions, thinly sliced
  • 50g butter
  • 2 tablespoons plain flour
  • 600ml beef stock
  • 600ml water
  • 6 slices French bread
  • 40g grated Parmesan cheese
  • 55g grated Gruyere cheese

  1. Preheat oven to 220 C / Gas 7.
  2. In a medium saucepan saute onions in butter until soft, approximately 20 minutes. Stir in flour and gradually add stock and water. Bring to the boil and simmer for 20 minutes.
  3. Meanwhile, toast French bread slices.
  4. Place toasted bread into soup bowls. Pour soup mixture over bread and sprinkle with Parmesan and Gruyere cheese. Bake for 10 minutes.
