    About this recipe: A super-fruity salad, made by tossing together pears, salad greens, spinach, dried cherries, feta and sweet-spiced walnuts. Serve alongside the sweet-vanilla honey dressing.

    Serves: 2 

    • 4 tablespoons caster sugar
    • 1 teaspoon ground cinnamon
    • 120g walnuts
    • 1 (411g) tin pears in light syrup, drained reserving syrup
    • 3 tablespoons white wine vinegar
    • 3 tablespoons fat free vanilla yoghurt
    • 2 tablespoons honey
    • 3/4 teaspoon sea salt
    • 1/4 teaspoon freshly ground black pepper
    • 1 teaspoon vanilla extract
    • 1 pinch ground nutmeg
    • 150g mixed salad greens
    • 150g fresh spinach leaves
    • 1 pear, peeled, cored and sliced
    • 80g dried cherries
    • 85g crumbled feta cheese

    1. Combine sugar, cinnamon and walnuts in a frying pan over medium heat. Mix together until sugar and cinnamon are melted and walnuts are evenly coated. Remove from heat. Spread walnuts on a large plate to cool.
    2. In a liquidiser, combine the drained pears, 75ml of the reserved syrup from the tin, vinegar, yoghurt, honey, salt, pepper, vanilla extract and nutmeg; blend until smooth.
    3. Assemble the salad by tossing together the mixed greens, spinach, pear slices, dried cherries, feta cheese and walnuts in a serving bowl. Serve with dressing on the side.
