Fruity avocado dip

    This dish is a little different than the average avocado dip. Mashed avocado is blended with red onion, chilli, grapes and peaches. Serve as a dip or spread. Wonderful for summer barbecues.

    Serves: 8 

    • 1 avocado, peeled, stone removed and diced
    • 1 1/2 teaspoons finely chopped red onion
    • 1 teaspoon finely chopped seeded Scotch bonnet chilli
    • 12 red grapes, halved
    • 100g fresh diced peaches
    • salt to taste
    • 2 tablespoons pomegranate seeds (optional)

    1. Gently mash the avocado with the onion and chilli in a bowl. Mix in the grapes and peaches. Season with salt and if desired, garnish with pomegranate seeds to serve.
