Goat Cheese and Rocket Penne


    A super-quick and delicious pasta dish. Penne is tossed with goat's cheese, rocket and cherry tomatoes. It's the perfect dish to throw together when you have no time to cook.

    Makes: 6 

    • 150g goat cheese
    • 40g wild rocket leaves, coarsely choppe
    • 150g cherry tomatoes, quartered
    • 4 tablespoons olive oil
    • 2 teaspoons finely chopped garlic
    • 1/2 teaspoon ground black pepper
    • 1/2 teaspoon salt
    • 225g penne pasta

    1. Cook penne in a large pot of boiling salted water until al dente.
    2. Crumble goat cheese into a large serving bowl. Add rocket, cherry tomatoes, olive oil, garlic and salt and pepper.
    3. Drain penne and toss with goat cheese mixture.
