1 tablespoon olive oil
1 small onion, chopped
3 cloves garlic, crushed
1 fresh red chilli, finely chopped
5 tablespoons dark brown soft sugar
1 teaspoon fennel seed, crushed
225g (8 oz) ketchup
2 tablespoons soy sauce
salt and freshly ground black pepper to taste

Heat the oil in a saucepan over medium heat. Stir in the onion, garlic, red chilli, brown sugar and fennel seeds, and cook until onion is tender and sugar has melted. Mix in ketchup and soy sauce. Bring to the boil. Reduce heat to low, and simmer 10 minutes.
