Easy BBQ Sauce for Ribs
A quick and easy sauce for glazing ribs or chicken while they cook on the barbecue. Crushed fennel seeds give this easy sauce a distinctive flavour.
Ingredients

- 1 tablespoon olive oil
- 1 small onion, chopped
- 3 cloves garlic, crushed
- 1 fresh red chilli, finely chopped
- 5 tablespoons dark brown soft sugar
- 1 teaspoon fennel seed, crushed
- 225g (8 oz) ketchup
- 2 tablespoons soy sauce
- salt and freshly ground black pepper to taste

- Heat the oil in a saucepan over medium heat. Stir in the onion, garlic, red chilli, brown sugar and fennel seeds, and cook until onion is tender and sugar has melted. Mix in ketchup and soy sauce. Bring to the boil. Reduce heat to low, and simmer 10 minutes.

Interesting flavor with the fennel seeds and soy sauce, very non-traditional. I ran short of BBQ sauce for a slow cooker pulled pork recipe today, so I made this easy sauce, and used about 1/2 cup to top off off the pork.
