Chicken and green chilli soup

    A hot and spicy chicken soup. Chicken is simmered with green chillies in a thick, creamy soup base. Serve with fresh crusty bread for lunch or dinner.

    Serves: 6 

    • 115g butter
    • 100g plain flour
    • 475ml milk
    • 750ml chicken stock
    • 275g cooked, boneless and skinless chicken, cut into bite-sized pieces
    • 70g chopped green chillies
    • salt and pepper to taste
    • 1 pinch garlic granules

    Prep:15min  ›  Cook:40min  ›  Ready in:55min 

    1. In a large pot melt butter. Add flour and stir the resulting paste over medium heat. Add the milk and chicken stock and beat to eliminate any lumps. Bring to the boil and reduce heat to simmer.
    2. Add the chicken, chillies, salt, pepper and garlic granules to taste. Stir well and cover. Simmer for 30 minutes and serve.

    Made this one and took it to a progressive dinner. Everyone wanted the recipe. I added more potatoes and carrots to it. Suggest adding some real onion and some real garlic to the butter (saute until tender) to give it more taste.  -  14 Dec 2002  (Review from Allrecipes US | Canada)


    Delicious soup. Came together very quickly. Added some additional heavy whipping cream to give it a more creamy texture. Also, added more green chiles as well as a can of green enchilada sauce.     didn't think I'd find a recipe for this southwestern favorite! happy to see it there. this is a delicious soup, but the chiles, hatch green chiles, make all the difference, so they shouldn't be optional.  -  31 Aug 2000  (Review from Allrecipes US | Canada)
