Easy Vegetable Soup

About this recipe: A quick but filling tomato-based vegetable soup. I use any fresh vegetables I have!

Serves: 6 

  • 1 (500g) tub chicken stock
  • 350ml (12 fl oz) tomato juice
  • 225ml (8 fl oz) water
  • 1 large potato, diced
  • 2 carrots, sliced
  • 2 stalks celery, diced
  • 1 (400g) tin chopped tomatoes
  • 100g (4 oz) fresh green beans, chopped
  • 150 (5 oz) frozen sweetcorn
  • salt and freshly ground black pepper to taste
  • Cajun seasoning to taste (optional)

Prep:10min  ›  Cook:30min  ›  Ready in:40min 

  1. In a large stock pot, combine all ingredients. Bring to the boil and simmer for 30 minutes or until all vegetables are tender.


If you don't have Cajun seasoning handy, just use a pinch each of paprika, chilli powder, oregano and parsley. Or simply use whichever dried herbs and spices you prefer.

Used different ingredients. FANTASTIC!! Don't make the initial mistake that I did when I first read the recipe and assume that it's going to boring. This made the perfect veggie soup and got rave, I mean RAVE, reviews! I did add some frozen green beans and sweetcorn, used only beef stock and no water and simmered it for a little longer to let the flavours meld, but that's all I changed. Very good...You should try it. You will be surprised. - 24 Jul 2008
