    About this recipe: Balsamic vinegar and feta cheese add extra flavour to this wholesome vegetarian pasta dish. Garnish with some fresh parsley or basil!

    Ingredients
    Serves: 8 

    • 1 (500g) pack wholewheat spaghetti
    • 3 tablespoons olive oil
    • 5 cloves garlic, minced
    • 3 large tomatoes, diced
    • 1 red onion, chopped
    • 1 yellow pepper, chopped
    • 1 red pepper, chopped
    • 100g (4 oz) chopped courgette
    • 50g (2 oz) fresh mushrooms, sliced
    • 2 tablespoons balsamic vinegar
    • 100g (4 oz) crumbled feta cheese

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Cook pasta according to pack instructions; drain.
    2. Heat the oil in a frying pan over medium heat, and sauté the garlic until lightly browned. Mix in the tomatoes, onion, yellow pepper, red pepper, courgette and mushrooms. Cook and stir until tender.
    3. Mix the balsamic vinegar into the frying pan. Toss with the cooked spaghetti, and sprinkle with feta cheese to serve.

    Note

    Wholewheat pasta is a good source of complex carbohydrate and has a low GI value.

    I took the advice that others have written (thank you!) and added oregano, basil, and crushed red pepper. I substituted regular tomatoes for grape tomatoes, which I added at the last minute (if you cook them as long as you cook everything else they will be mushy). I also put in significantly more feta than the recipe recommends. With these changes, it was extremely delicious.  -  10 Jul 2008  (Review from Allrecipes US | Canada)

    Great EASY recipe for all those fresh garden vegetables (with a few changes). I added oregano, basil, parsley, ground red pepper, red pepper flakes, salt, and pepper.
