Roasted carrots with honey

    This side dish is simple, easy to make and delicious. Carrots are drizzled with olive oil and honey, then roasted to perfection. These carrots go perfectly well with any meal.

    Ingredients
    Makes: 4 

    • 8 carrots, peeled
    • 3 tablespoons olive oil
    • 4 tablespoons honey
    • salt and ground black pepper to taste

    Method
    Prep:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Preheat an oven to 180 C / Gas 4.
    2. Place the whole carrots into a baking dish and drizzle with olive oil. Mix until the carrots are completely covered with olive oil. Pour in the honey, then season to taste with salt and pepper; mix until evenly coated.
    3. Bake in the preheated oven until just tender or cooked to your desired degree of doneness, 40 minutes to 1 hour.

    Tried this last night and was delicious! I don't normally like cooked carrots (only eat raw) but this recipe was fabulous, I've found a new favourite!  -  23 Jun 2013

    Made using 10 carrots laid out whole on a cookie sheet lined with foil. Needed foil - what a mess - but easy cleanup w/foil. Used no pepper and very little salt. Extremely mild carrot flavor; reminded me of baked sweet potato fries. Still LOOKS like carrots so kids are reluctant to try - however, they can down them without making faces. Will make again!     Great recipe! Easy and tasty. I'll definitely make this again. I wish I took another reviewer's advice and lined my dish with foil - it makes a dark brown mess in the pan. But I used baking soda and my sponge and it rubbed right off!  -  11 May 2010  (Review from Allrecipes US | Canada)
