    About this recipe: This is a great alternative to porridge. Couscous is cooked in milk and honey, then tossed with dried apricots, raisins and flaked almonds. It's so good that you can serve it as a dessert.

    Ingredients
    Serves: 8 

    • 500ml skimmed milk
    • 2 tablespoons honey
    • 1 tablespoon ground cinnamon
    • 350g dry couscous
    • 50g chopped dried apricots
    • 50g raisins
    • 75g flaked almonds

    Method
    Prep:5min  ›  Cook:5min  ›  Ready in:10min 

    1. In a saucepan over medium heat, combine the milk, honey and cinnamon. As soon as it comes to a boil, stir in the couscous. Turn off the heat, cover and let stand for 5 minutes. Stir in the apricots, raisins and almonds.

    I made this using rice milk and whole wheat couscous and it was great. Been having it for a week straight. Used 1 cup of milk to 1/2 a cup of couscous for 1-2 servings - 06 May 2012

    Made this in my cooking class, Very nice! The kids loved it. I added a little more honey though because it didn't seem sweet enough. - 11 Jan 2016

    Not made this yet but it could be made using Quinoa which is super healthy and tasty. Recipe looks good though and I'll be making it soon :D - 12 Nov 2013
