Warm Brie with Tomatoes and Basil

About this recipe: This is the perfect starter for casual dinner parties. A petit Brie wheel is warmed in the microwave, then topped with a succulent mixture of tomatoes, garlic and basil. Serve with crostini, crusty bread or crackers.


Serves: 8 

  • 2 plum tomatoes, chopped
  • 1 small onion, chopped
  • 1 clove garlic, peeled and finely chopped
  • 1 teaspoon chopped fresh basil
  • 1 teaspoon chopped fresh parsley
  • 4 tablespoons olive oil
  • 1 (350g) petit Brie cheese

  1. In a small bowl, mix plum tomatoes, onion, garlic, basil, parsley and olive oil. Cover and chill in the refrigerator at least 1 hour.
  2. Remove top layer of rind from brie. Place brie in a small microwave safe serving dish. Microwave on high 1 minute or until the cheese begins to soften.
  3. Spoon roma tomato mixture over the cheese. Microwave on high 1 minute or until slightly melted. Serve immediately with crackers or breads.
