Sausage and Vegetable Penne

About this recipe: A quick and delicious pasta recipe. Penne is heated with sliced sausages, peppers, mushrooms and Italian dressing, before being garnished with Parmesan cheese. Serve with a side salad, if desired.


Serves: 6 

  • 6 hot Italian sausages or any other spicy pork sausages
  • 1 large onion, chopped
  • 1 red peppers, seeded and diced
  • 1 green pepper, seeded and diced
  • 75g fresh mushrooms, thickly sliced
  • 450g penne pasta
  • 125ml Italian salad dressing
  • 4 tablespoons grated Parmesan cheese for topping

  1. Bring a large pot of water to the boil. Add penne pasta and cook until tender, about 10 minutes. Drain.
  2. Place the Italian sausages in a small frying pan over medium heat. Cook, turning occasionally until firm and cooked through.
  3. Meanwhile, in a separate larger frying pan, combine the red and green peppers, mushrooms and Italian dressing. Cook and stir until the vegetables are tender, about 5 minutes.
  4. Slice the Italian sausages and stir into the vegetables. Continue to cook and stir for another 5 minutes.
  5. To serve, place servings of pasta onto plates. Top with the sausage and vegetable mixture. Sprinkle liberally with Parmesan cheese.
