    About this recipe: A quick and deliciously rich tomato sauce. Be sure to pick the ripest tomatoes for the best flavour. Serve over pasta with liberal sprinklings of Parmesan cheese.

    Makes: 8 - 10 servings

    • 24 large tomatoes, peeled, seeded and chopped
    • 125g chopped celery
    • 60g chopped onion
    • 4 tablespoons chopped green pepper
    • 2 teaspoons dried basil
    • 1 tablespoon caster sugar

    1. In a large saucepan over medium heat, combine tomatoes, celery, onion, pepper, basil and sugar. Cover and cook for 10 minutes, stirring occasionally to prevent sticking.
