Grilled chicken kale and feta salad

    This salad has the perfect combination of flavours and textures. Swiss chard and kale is tossed with grilled chicken, raisins, walnuts and feta cheese in a honey vinaigrette. Feel free to substitute in Parmesan or blue cheese instead of feta.

    Ingredients
    Serves: 4 

    • 125ml cider vinegar
    • 2 teaspoons honey
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 1/2 teaspoon dried oregano
    • 125ml olive oil
    • 1 bunch kale, torn into bite-sized pieces
    • 1 bunch Swiss chard, torn into bite-sized pieces
    • 450g grilled skinless, boneless chicken breast, sliced
    • 175g crumbled feta cheese or more to taste
    • 55g raisins
    • 40g chopped, toasted walnuts

    1. Whisk the vinegar, honey, salt, pepper and oregano in a bowl until the honey has dissolved. Whisk in the olive oil until evenly blended. Place the kale, Swiss chard, chicken, feta cheese, raisins and walnuts into a bowl. Toss with the dressing to serve.

    Ingredients

    If you can't get your hands on Swiss chard, use spinach instead.

    Loved this salad! What a great alternative to eating empty lettuce that's all water, whereas kale and chard have so many great vitamins and minerals!     Great recipe but way too much vinegar. I will cut in half next time. I had to add sugar to each bowl of my salad in order to get this down - way too much vinegar for me but I liked the recipe otherwise.
