This is a nicely spiced enchilada sauce - pour over corn tortillas stuffed with cheese and your choice of shredded beef or chicken, or refried beans.

Ingredients

Serves: 8
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 onion, minced
  • 1/2 teaspoon dried oregano
  • 2 1/2 teaspoons chilli powder
  • 1/2 teaspoon dried basil
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1 teaspoon dried parsley
  • 4 tablespoons salsa
  • 175g (6 oz) passata
  • 350ml (12 fl oz) water

Preparation method

Prep: 5 mins | Cook: 15 mins

Heat the oil in a large saucepan over medium heat. Add the garlic and sauté for 1 to 2 minutes. Add the onion, oregano, chilli powder, basil, black pepper, salt, cumin, parsley, salsa and passata.
2.
Mix together and then stir in the water. Bring to the boil, reduce heat to low and simmer for 15 to 20 minutes.

OH! I also added 1 Tbsp flour at the end to thicken it up- make sure your whisk it is completely otherwise you will get clumps!

This is great! I made a few adjustments....I sautéed the onions with the garlic; I used 500g of passata, 1 tsp cumin, a pinch of cinnamon and chicken broth instead of water.

Very nice. I added some pepper and used spring onions instead of onion. I won't be using as much chilli powder as the original recipe as it blew my girlfriends head off!
