About this recipe:This is a fun, Mexican-inspired warm cheesy dip, made by layering refried beans with spiced mince, salsa and grated cheddar cheese. Serve with tortilla chips for a fantastic informal party dish.
450g minced beef
1 onion, chopped
1 (35g) packet Mexican spice taco seasoning mix
2 tins refried beans
225g grated Cheddar cheese
350g tortilla chips
chopped iceberg lettuce (optional)
spring onions (optional)
diced tomatoes (optional)
grated Cheddar cheese (optional)
diced avocado (optional)
1 tablespoon soured cream (optional)

Preheat the oven to 180 C / Gas 4. Lightly grease a 23x33cm or similar sized dish; set aside.
Heat a large frying pan over medium-high heat and stir in the minced beef and onions. Cook and stir until the beef is crumbly and evenly browned. Drain fat. Mix in the taco seasoning and set aside.
Spread the refried beans to cover the bottom of the prepared dish. Layer the cooked minced beef and onions evenly over the refried beans. Pour the salsa over the minced beef and spread 225g grated Cheddar cheese over the salsa layer.
Bake in the preheated oven until the cheese is bubbly and the layers are heated through. Serve with tortilla chips and your choice of fresh toppings.
