Lentil and Smoked Sausage Stew

    50 min

This is the perfect stew to serve over the cold winter months. Smoked sausage is simmered with potatoes, lentils and tomatoes. It's thick, hearty and full of flavour.

    1. Place the potatoes, tomatoes, onion, garlic and sausage in a large pot with enough water to cover. Bring to the boil and cook 15 minutes.
    2. Stir lentils into the pot. Add more water if necessary to just cover all ingredients. Season with salt and pepper.
    3. Bring to the boil. Reduce heat to medium-low and continue cooking 20 minutes, stirring occasionally, until lentils are tender.

Made this tonight and really enjoyed it. Made a few variations though, I fried the onion and garlic together for a few minutes, then added some hot smoked paprika. Yum, loved by all!  -  26 Aug 2012

I made this today. I couldnt find smoked sausage in the supermarket so I used chorizo instead. It turned out really tasty. Thanks for sharing !  -  11 Sep 2011

The flavor was really good (better leftover) but the cooking time is off. I think this should be cooked for 3-4 hours because the lentils were really not done after 20minutes. Plus then the flavors could really mix in  -  11 Mar 2008  (Review from Allrecipes US | Canada)
