About this recipe:
This guacamole is lower in fat than the average guacamole. Cooked broccoli is mashed with avocado and seasonings. Serve alongside Mexican food, or as a dip with tortilla chips.
1 large broccoli, cut into florets
1 avocado, peeled, stone removed and diced
2 tablespoons red onion, finely chopped
4 cloves garlic, finely chopped
2 tablespoons lime juice
1 tablespoon hot sauce
2 tablespoons chopped fresh coriander
salt to taste
- Boil or steam broccoli until very soft.
- In a large bowl, mash broccoli with avocado. Mix in onions, garlic, lime juice, hot sauce and coriander until mixture resembles the consistency of mashed potatoes. Season to taste with salt.
