About this recipe: Packed with chicken and vegetables, this thick and creamy chicken soup is a must during the winter. It'll warm you up right down to your toes!


Serves: 4 

  • 2 tablespoons butter
  • 2 onions, diced
  • 2 potatoes, diced
  • 1 large carrot, diced
  • 1 celery stick, diced
  • 2 tablespoons plain flour
  • 750ml chicken stock
  • 150ml milk
  • 175g cooked chicken
  • single cream, to taste
  • Salt and ground black pepper, to taste

  1. Melt the butter in a large pan and cook the onions, potatoes, carrots and celery gently for about 5-10 minutes or until softened. Do not allow the vegetables to brown.
  2. Sprinkle over the flour, and cook over low heat for a few minutes, stirring all the time. Gradually pour in the stock and the milk, stirring every few minutes and allow to come to the boil.
  3. Turn down the heat; add the cooked chicken and simmer for 5-10 minutes.
  4. Pour the soup into a food processor or blender in batches and puree until smooth. Transfer back into the soup pot, add as much cream as you like and season with salt and pepper.

easy quick and delicious. I used 2 cooked chicken breasts cut up in chunks. I added only skimmed milk as no cream in house and it still was creamy after blitzing it with a hand held blender. I just took half out the saucepan, blitzed each half separately and put them all together in pan again. I left little bits as I prefer that consistency. This was an easy recipe to prepare and as the previous reviewer said, it is just as creamy without the cream. Both my fussy kids cleared their bowls and said it tasted fantastic. For me I could have added a bit more salt and maybe even some sweetcorn and bacon. But for my first attempt at chicken soup it was tasty and I will definitely make it again. - 21 Apr 2013


This soup is just gorgeous, made it with leftover chicken and used half fat single cream, all the family love this soup even my very fussy teenager. Can see this being a regular in our house! - 28 Mar 2014
