Marinated beetroot salad

    This is an easy, but tasty beetroot salad. It's crisp and packed full of flavour. Beetroot is marinated with onions, caster sugar, mustard and vinegar. It goes particularly well at summer barbecues and picnics.

    Serves: 4 

    • 450g vacuum packed beetroots, sliced into 5mm slices
    • 4 tablespoons diced red onion
    • 4 tablespoons caster sugar
    • 1 teaspoon mustard
    • 4 tablespoons water
    • 4 tablespoons white wine vinegar

    1. To the beetroots, add onions and toss.
    2. In a saucepan over medium heat, cook the sugar, mustard and water until dissolved. Add vinegar and bring to the boil; remove from heat and allow to cool.
    3. Pour over the beetroot slices and onions, toss and refrigerate for 4 to 6 hours. Remove from refrigerator and serve at room temperature.
