Sweet and tangy fruit salad

    Serve this salad at your next dinner party and it's guaranteed to make everybody's taste buds sing! The sweetness of the mango, cantaloupe and watermelon are offset by the creaminess from the avocado and the tanginess of the pickled onions. A refreshing summer fruit salad that can be enjoyed all year round.

    Serves: 6 

    • 1 small red onion, chopped
    • 2 tablespoons red wine vinegar
    • 125ml freshly squeezed orange juice
    • 2 teaspoons extra-virgin olive oil
    • 1 tablespoon grated orange zest
    • 1/4 teaspoon sea salt
    • freshly ground black pepper
    • 350g small cantaloupe balls
    • 300g seedless watermelon, cut into 1.25 cubes
    • 1 ripe mango, cut into 5mm cubes
    • 45g coriander leaves
    • 2 ripe avocados
    • 1 tablespoon fresh lime juice
    • 1/4 teaspoon sea salt
    • 6 thin lime slices

    1. To make pickled onions, combine the red onion and the red wine vinegar in a small bowl. Cover; chill for at least one hour.
    2. Pour the orange juice into a large salad bowl. Whisk in the olive oil and orange zest; season with 1/4 teaspoon salt and black pepper. Toss the cantaloupe, watermelon and mango in the dressing. Just before serving, stir in the pickled onions and coriander leaves.
    3. Cut the avocados into 1.25cm cubes; place in a small bowl. Sprinkle with the lime juice and season with the remaining 1/4 teaspoon salt. Stir lightly to combine. Spoon an even amount of avocado into the bottom of 6 large martini or wine glasses. Top avocado with melon salad; garnish each salad with a lime slice.

    This recipe is a wonderful change of pace! I wasn't sure if the onions, juice and vinegar would be a good combination with sweet melons, but it was terrific. My family loved it. I didn't change anything other than 1/4 cup of store bought orange juice because I only had one orange on hand and could only get 1/4 cup of juice from it. I used the store bought juice to make it to the 1/2 cup the recipe called for. I also added a little more pepper because I love pepper!     This was a hit. Pretty, colorful, and refreshing. Although it is involved to make, most of it can be prepared hours ahead and assembled at the last minute. This is the most interesting salad I've ever made or tasted.
