About this recipe:This mojito has the addition of cucumber and mint, making it light and refreshing. It's the perfect summer drink to enjoy at barbecues and all year round.
1 lime, quartered
2 sprigs fresh mint leaves
1 tablespoon caster sugar
2 slices cucumber
6 cubes ice or as needed
4 tablespoons white rum
115ml sparking water

Squeeze the lime quarters into a highball glass and drop the limes into the glass. Add the mint leaves and sugar. Squish well with the back of a spoon. Place the cucumber slices into the glass and fill with ice cubes. Pour in the rum, then top off with sparkling water. Stir gently and serve.
I used a lot more ice and filled the glass with crushed ice topped with sparkling water. It makes for a smoother cocktail. I also found that i needed a bit more sugar (i used ordinary not caster).
