Cucumber mojito

    This mojito has the addition of cucumber and mint, making it light and refreshing. It's the perfect summer drink to enjoy at barbecues and all year round.

    Serves: 1 

    • 1 lime, quartered
    • 2 sprigs fresh mint leaves
    • 1 tablespoon caster sugar
    • 2 slices cucumber
    • 6 cubes ice or as needed
    • 4 tablespoons white rum
    • 115ml sparking water

    1. Squeeze the lime quarters into a highball glass and drop the limes into the glass. Add the mint leaves and sugar. Squish well with the back of a spoon. Place the cucumber slices into the glass and fill with ice cubes. Pour in the rum, then top off with sparkling water. Stir gently and serve.

    Something else. I used a lot more ice and filled the glass with crushed ice topped with sparkling water. It makes for a smoother cocktail. I also found that i needed a bit more sugar (i used ordinary not caster). If you are crusing the ice in a machine, throw the leaves and sugar in to blend and chop...  -  05 Oct 2010

    This can be made for a group by mixing all appropriate amount of servings except for alcohol. Alcohol should be added when pouring servings. If not a fan of cucumber (I highly recommend it though) just omit. Best with crushed ice.
