About this recipe:A simple chilli con carne dish made with chicken! Chicken is pan-seared, then transferred to a slow cooker with tomatoes, beans and seasonings. It's the perfect dish to keep you warm throughout the winter. Serve with freshly cooked rice, jacket potatoes or corn bread.
900g skinless, boneless chicken breast meat, cubed
1/2 tablespoon olive oil
1 tablespoon Italian herb seasoning
4 (400g) tins whole plum peeled tomatoes
2 (410g) tins kidney beans, drained and rinsed
35g chilli con carne seasoning mix, such as Schwartz
1 (130g) tin diced green chillies
1 onion, finely chopped
3 cloves garlic, finely chopped

Heat oil in a frying pan over medium heat and add the chicken and half of the Italian herb seasoning. Cook, stirring frequently, until chicken is cooked through and evenly browned.
Place the remaining Italian herb seasoning, tomatoes, kidney beans, seasoning mix, diced chillies, onion, garlic and water in a slow cooker. Stir in chicken and juices
Cover and cook on High for three hours.
Tinned diced green chillies can be purchased online. Alternatively, you can use fresh chillies to taste.
