About this recipe: This dish is quick and easy to make. Squash halves are microwaved, then grilled with butter and dark brown sugar. It's sweet, buttery and darn tasty. Serve as a side dish to any meal.


Makes: 2 

  • 1 acorn squash, halved and seeded
  • salt and pepper to taste
  • 60g butter, divided
  • 4 tablespoons dark brown soft sugar

  1. In a microwave safe baking dish pour enough water to reach 3.75cm in depth. Place the squash halves cut side down in the water and pierce the skin with a fork a few times. Microwave on high for 15 to 20 minutes. Drain.
  2. Sprinkle each half with salt and pepper to taste. Place 30g butter and 2 tablespoons dark brown soft sugar in each half.
  3. Grill 5 minutes or until butter is melted. Mix the melted butter and sugar into the flesh and serve.


If acorn squash is unavailable, use butternut squash instead.
