Creamy Fruit Salad

    This dessert is fruity and dreamy. Apples, pears, bananas, mandarins, pecans and fruit cocktail are tossed in a creamy sauce. Serve for breakfast, brunch, dessert or general snacking.

    Serves: 4 

    • 1 (415g) tin fruit cocktail, juice reserved
    • 2 (295g) tins mandarin oranges, drained
    • 3 apples, cored and diced with peel
    • 2 pears, cored and diced
    • 2 bananas
    • 115g chopped pecans
    • 225g cream cheese
    • 2 teaspoons lemon juice

    1. In a large bowl combine fruit cocktail, mandarin oranges, apples, pears and pecans.
    2. In a small mixing bowl, mix cream cheese and lemon juice. Add enough fruit cocktail juice to achieve a smooth and creamy consistency.
    3. Fold the cream cheese mixture into the fruit mixture and toss. Cover and chill for 1 hour before serving. Prior to serving slice bananas, add to fruit salad and toss again.

    I made this recipe for a Christmas brunch, and it was delicious! I would make it again for sure, but I would probably put in fresh mandarin oranges, because they fell apart, and I would put in less juice from the fruit cocktail in the cream cheese mixture. The recipe wasn't specific, so I may have put in too much, thinking "this seems a little thick and more seems to be making it creamier."     This recipe sounded great when I first read it. However, I think I made the same mistake as another reviewer and used too much syrup, because it was very thin and did not improve after chilling.
