1/2 (500g) packet tagliatelle
4 tablespoons olive oil
1 onion, chopped
1 clove garlic, minced
2 courgettes, julienned
1 red pepper, thinly sliced
1 green pepper, thinly sliced
2 tomatoes, chopped
1/2 teaspoon salt
1 pinch cayenne pepper

Cook pasta according to packet instructions. Drain and set aside.
While the pasta is cooking, prepare the vegetables. In a large frying pan, heat oil over medium heat. Add onion, garlic, courgettes and peppers; sauté 5 minutes. Add tomatoes, salt and cayenne pepper. Cook over low heat 5 minutes, or until vegetables are crisp and tender.
Pour vegetables over tagliatelle and toss to coat. Serve immediately, or chill to serve as a pasta salad. Top with grated Parmesan, if desired.

Used different ingredients.
I didn't have tagliatelle to hand, so I used fusilli. Just as delicious! I also didn't have peppers, so added some spinach instead. You really can't go wrong with this delish veggie recipe. I would keep the courgette, though, as it lends a nice sweetness to the dish! - 29 Sep 2008
