About this recipe: A robust and well-flavoured quinoa dish. It's made by stirring basil pesto and chopped tomatoes through cooked quinoa. Fabulously easy and healthy, it is the perfect side dish to any meal. Use vegetable stock if you want a vegetarian dish.


Serves: 4 

  • 175g quinoa, rinsed and drained
  • 475ml chicken stock
  • 2 tablespoons basil pesto
  • 1 tomato, diced
  • salt and pepper to taste

  1. Bring the quinoa and chicken stock to the boil in a saucepan; cover, reduce heat to low and simmer until the moisture is completely absorbed, about 15 minutes. Remove from heat; stir the pesto through the quinoa. Fold the tomato into the mixture. Season with salt and pepper to serve.
