About this recipe: This soup is smooth, creamy, cheesy and hearty. It is guaranteed to keep you warm through the cold winter months. Potatoes are simmered with ham and Cheddar cheese in a creamy soup base.

Serves: 10 

  • 475ml water
  • 310g peeled and cubed red potatoes
  • 50g melted butter
  • 1 small onion, chopped
  • 3 tablespoons plain flour
  • salt and pepper to taste
  • 700ml milk
  • 1/2 teaspoon caster sugar
  • 120g grated Cheddar cheese
  • 115g diced ham

  1. Using a medium sized stock pot bring water to the boil, add potatoes and cook until tender. Drain reserving 250ml liquid.
  2. Stir in butter, onion and flour. Season with salt and pepper. Gradually stir in potatoes, reserved liquid, milk, sugar, cheese and ham. Simmer for 30 minutes, stirring frequently.
