    About this recipe: This is a delicious soup that's really easy to make. Potatoes are simmered with carrots, celery, sweetcorn and cheese in a creamy soup base. Serve with crusty bread for the perfect winter meal.

    Serves: 8 

    • 310g peeled and diced potatoes
    • 65g diced carrots
    • 60g diced celery
    • 4 tablespoons chopped onion
    • 1 teaspoon salt
    • 50g butter
    • 475ml milk
    • 4 tablespoons plain flour
    • 2 1/2 (340g) tins sweetcorn, drained
    • 280g grated Cheddar cheese

    1. Place potatoes, carrots, celery, onion and salt in a large pot with water to cover. Bring to the boil, reduce heat and simmer 20 minutes.
    2. Meanwhile, combine butter, milk and flour in a small saucepan over medium-low heat. Stir constantly until smooth and thick.
    3. Pour milk mixture into cooked vegetables. Stir in sweetcorn and cheese until cheese is melted. Serve.
