Easy Leek and Potato Soup

About this recipe: This is a quick and easy recipe for a hearty soup. Potatoes are simmered with leeks in a chicken stock. It's thick, creamy and delicious. Serve with a sprinkling of fresh parsley and bread rolls.

Serves: 4 

  • 30g unsalted butter
  • 90g sliced leeks
  • 160g chopped onion
  • 400ml chicken stock
  • 950ml milk
  • 65g instant mash
  • 1 teaspoon salt
  • 1/2 teaspoon celery salt
  • 2 tablespoons chopped fresh parsley

  1. Melt the butter in a large pot over medium heat. Saute the leeks and onion in the butter for 5 minutes or until tender. Pour in the stock and the milk and mix well.
  2. Bring to the boil, reduce heat to low and simmer for 5 minutes. Stir in the instant mash, salt, celery salt and parsley. Allow to thicken and heat through.
