    About this recipe: These little morsels are soft and sponge-like. They are also delicately flavoured with lemon. You can decorate them with drizzled lemon icing or dust them with icing sugar before serving. They are great for afternoon tea, children's birthday parties or as food gifts.

    Makes: 48 

    • 375g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 225g unsalted butter, softened
    • 300g caster sugar
    • 2 eggs
    • 4 tablespoons lemon juice
    • 1 lemon, zested
    • 1/2 teaspoon vanilla extract

    1. Preheat oven to 180 C / Gas 4.
    2. Stir together the flour, bicarbonate of soda and salt in a bowl until thoroughly combined. In a mixing bowl, beat the butter and sugar with an electric mixer until creamy, about 5 minutes, then beat in eggs, one at a time, incorporating each before adding the next. Beat in the lemon juice, lemon zest and vanilla extract. Gently mix in the flour mixture until just incorporated. Chill the dough about 30 minutes.
    3. Scoop up about 1 1/2 teaspoon of dough per lemon drop, gently form into a ball and place the balls onto baking trays about 5cm apart.
    4. Bake in the preheated oven until the lemon drops are set and just beginning to brown at the edges, about 8 minutes; cool on baking trays for 1 minute before removing to finish cooling on racks.
