Iced Spiced Pumpkin Cookies

    A soft, yet delicious cookie, which is lightly spiced, dotted with walnuts and packed full of flavour. They are perfect when served with a cup of tea or coffee.

    Makes: 48 

    • 225g margarine
    • 110g dark brown soft sugar
    • 100g caster sugar
    • 250g pumpkin puree
    • 1 egg
    • 1 teaspoon vanilla extract
    • 250g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon baking powder
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon salt
    • 120g chopped walnuts
    • 50g unsalted butter
    • 110g dark brown soft sugar
    • 4 tablespoons milk
    • 250g icing sugar

    1. Preheat the oven to 180 C / Gas 4. Grease baking trays.
    2. In a large bowl, cream together margarine, 110g dark brown soft sugar and caster sugar. Mix in pumpkin puree, egg and vanilla. Sieve together flour, bicarbonate of soda, baking powder, cinnamon and salt; mix into the creamed mixture. Stir in walnuts. Using heaped spoonfuls, drop dough onto the prepared baking trays.
    3. Bake for 10 to 12 minutes in the preheated oven. Cool on wire racks.
    4. In a small saucepan over medium heat, combine the 50g butter and 110g dark brown soft sugar. Bring to the boil; cook and stir for 1 minute or until slightly thickened. Cool slightly, then stir in the milk and beat until smooth. Gradually stir in 250g icing sugar until frosting has reached desired consistency. Spread on cooled cookies.

    These were very good! I use butter instead of shortening, and chopped, dried figs instead of walnuts. Tonight I am going with chocolate chips. Very good with a maple frosting also.     These cookies are so delicious!!... To ice them I dipped them in the pan I made the icing in, face down, while they were still a little warm.. I placed them on a rack with some tin foil underneath so the icing wouldnt drip on the counter... After I iced the last cookie I started over with the first and dipped them again.. They tasted like glazed doughnuts when they were completely cooled... I added them to my Christmas goodie, and had requests for the recipe..
