Fresh Herb Marinade

    A marinade that's perfect for chicken, guaranteed to please every time.

    Serves: 5 

    • 225ml (8 fl oz) olive oil
    • 8 tablespoons soy sauce
    • 4 lemons, juiced
    • 4 tablespoons mustard
    • small handful minced fresh chives
    • small handful minced fresh sage
    • handful minced fresh oregano
    • handful chopped fresh parsley
    • small handful minced fresh thyme
    • 4 cloves garlic, minced
    • 1 tablespoon paprika

    1. In a small bowl, whisk together the olive oil, soy sauce, lemon juice and mustard. Stir in remaining ingredients.
    2. Cover, and refrigerate for 30 minutes to allow flavours to blend before using it to marinate meat, poultry or fish.

    I used this marinade over the weekend when I had a BBQ and it went down a storm! All of my guests thought that it was gorgeous. The sharpness from the lemon cut delicately through the herbs and worked well with the paprika. I omitted the chives as I didn't have any to hand but I don't think I'll bother putting them in next time as I thought it went well just as it was. In fact I'm going to have it tonight with some couscous!  -  11 Aug 2009

    delicious and versatile marinade! I have also used these exact ingredients with sauteed veggies and served over baby potatoes. My husband, who really enjoyed the potato/veggie mixture, said "you have out done yourself!"  -  24 Jul 2008
