    About this recipe: A super-hearty soup, which is simple to make and tastes delicious. Chicken is simmered with carrots, potatoes and pasta in a tomato soup base. Serve with crusty fresh bread, if desired. It's the perfect winter warmer.

    Ingredients
    Serves: 6 

    • 225g skinless, boneless chicken breast fillets, cut into 2.5cm cubes
    • 1 teaspoon vegetable oil
    • 120g thinly sliced carrots
    • 155g thinly sliced potatoes
    • 1 1/2 (40g) packets French onion soup mix, such as Knorr's
    • 2 tablespoons caster sugar
    • 950ml water
    • 800g passata
    • 1/4 teaspoon Italian herb seasoning
    • 1 dash hot pepper sauce
    • 55g pasta shells
    • ground black pepper to taste

    Method
    Prep:10min  ›  Cook:40min  ›  Extra time:50min  ›  Ready in:1hr40min 

    1. In a large stock pot, heat oil over medium heat; add chicken and brown lightly.
    2. Stir in carrots, potatoes, French onion soup mix, sugar, water, tomatoes, Italian herb seasoning, hot pepper sauce and pepper. Stir frequently.
    3. Bring to the boil, add pasta and reduce heat. Simmer gently for 30 to 40 minutes or until vegetables are tender.

    My son and his friend are not fond of onions and gave this soup 4 stars. My husband and I both thought it was a wonderful 5 star soup.     An easy soup to make with great flavor. Perfect for a cold winter night. I used elbow pasta instead of seashells, and added 1/2 cup frozen corn, it worked out well. This soup would probably freeze well too.  -  05 Dec 2001  (Review from Allrecipes US | Canada)
