    About this recipe: This is a simple, yet delicious stuffing meant to go with roast turkey or chicken. Quinoa is mixed with onion, mushrooms, apples, pine nuts, raisins and seasonings. Try it as an alternative stuffing for Christmas dinner or Sunday lunch.

    Serves: 8 

    • 170g quinoa, rinsed
    • 475ml water
    • 1 onion, chopped
    • 450g fresh mushrooms, sliced
    • 2 apples, peeled, cored and chopped
    • 4 tablespoons pine nuts
    • 50g raisins
    • 2 cloves garlic, finely chopped
    • 1 teaspoon salt
    • 1/4 teaspoon ground black pepper
    • 2 teaspoons chicken seasoning

    1. Place the quinoa and water in a large, microwave-safe bowl; cover. Cook on HIGH for 20 minutes.
    2. Stir the onion, mushrooms, apples, pine nuts, raisins, garlic, salt, pepper and chicken seasoning in with the quinoa. Use to stuff chicken/turkey.
