About this recipe: This quick and easy chicken salad works perfectly as a sandwich filler. Chicken is tossed with spring onions, cranberries, apple and pecans in a mayonnaise-based dressing.


Serves: 4 

  • 2 cooked chicken breast fillets, chopped
  • 125ml mayonnaise or to taste
  • 2 spring onions, chopped
  • 60g sweetened dried cranberries
  • 1/4 green apple, grated
  • 4 tablespoons chopped pecans
  • 1 tablespoon lime juice
  • salt and black pepper to taste
  • 1/4 teaspoon dried dill

  1. Mix together the chicken and mayonnaise in a bowl, stir to coat well, then stir in the spring onions, dried cranberries, apple, pecans, lime juice, salt, pepper and dill. Serve immediately or refrigerate several hours or overnight (the flavour just gets better).
