About this recipe:This is a deliciously different shellfish dish. Razor clams are stir-fried with ginger and sa cha sauce. Serve as a starter or as a main course with freshly cooked rice.
2 tablespoons vegetable oil
2 teaspoons finely grated fresh ginger
450g live razor clams
1 1/2 tablespoons sa cha sauce
1 tablespoon thinly sliced red pepper
2 spring onions, cut into thin strips

Heat the vegetable oil in a large frying pan over high heat. Stir the ginger into the hot oil and cook until fragrant, about 30 seconds. Add the razor clams in their shells and cook until all of the clams have opened, about 2 minutes. Stir in the sa cha sauce and water and bring to the boil. Toss with the pepper and spring onions to serve.
Put the clams in salt water for at least 15 minutes to take away the sand. Then drain the water and set aside.
Sa cha sauce can be purchased in Chinese/Oriental speciality shops or online.
You can get hold of razor clams at your local/speciality fishmongers. You may need to pre-order them.
