This is a deliciously different shellfish dish. Razor clams are stir-fried with ginger and sa cha sauce. Serve as a starter or as a main course with freshly cooked rice.
Put the clams in salt water for at least 15 minutes to take away the sand. Then drain the water and set aside.
Sa cha sauce can be purchased in Chinese/Oriental speciality shops or online. You can get hold of razor clams at your local/speciality fishmongers. You may need to pre-order them.
