About this recipe: This aromatic no-cook chutney is a wonderful condiment for meats, especially lamb.

Ingredients
Serves: 28 

  • 50g (2 oz) chopped fresh mint leaves
  • 50g (2 oz) minced onion
  • 50g (2 oz) caster sugar
  • 4 tablespoons distilled malt vinegar
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon salt

Method

  1. In a medium bowl, mix the mint, onion, sugar, vinegar, cayenne pepper and salt. Cover the mixture and refrigerate 2 hours, or until chilled.

Used different ingredients. Great recipe - it's the second time I made it. Last night, I served it for Easter dinner with Lamb and everyone loved it. I added a little extra cayenne pepper to give it an extra kick and I made it a day ahead of time. - 15 Sep 2008

Altered ingredient amounts. Excellent!! I made this to go with Lamb chops. I did decrease the recipe to 12 servings which is actually enough for about 4 servings. I added a little bit of minced garlic since that's a staple in this household. Thank you so much for this gorgeous recipe! :-) - 15 Sep 2008
