Roasted garlic and Parmesan bread

    This garlic bread is the perfect side dish to go with Italian dishes, such as pasta or soups. Roasted garlic is blended with butter, parsley and Parmesan, spread on ciabatta and grilled to perfection.

    Serves: 8 

    • 3 bulbs garlic
    • 2 tablespoons olive oil
    • 450g ciabatta bread
    • 110g butter
    • 1 tablespoon chopped fresh parsley
    • 2 tablespoons grated Parmesan cheese

    1. Preheat the oven to 180 C / Gas 4. Slice the tops off of the garlic bulbs so that the tip of each clove is exposed. Place the bulbs on a baking tray and drizzle with olive oil. Bake for 30 minutes or until garlic is soft.
    2. Preheat the grill. Slice the loaf of bread in half horizontally and place cut side up on a baking tray.
    3. Squeeze the cloves of garlic from their skins into a medium bowl. Stir in the butter, parsley and Parmesan cheese until well blended. Spread onto the cut sides of the bread.
    4. Grill for about 5 minutes, until toasted.

    For those who like stronger flavour i would add a bit more garlic and some Gorgonzola cheese which makes a very nice Italian combo with any Italian dish.  -  28 May 2012


    Great recipe made it with french style bread though and in cut up pieces and used butter rather than oil but loved the recipe.  -  26 May 2012
